Savor Chef John's flavorful Beef on Weck sandwiches, featuring fresh caraway rolls, horseradish, and thinly sliced beef. Enjoy with au jus, chips or fries, and pickles.
Ingredients:
  • 2 pounds beef top-sirloin roast
  • 1 tablespoon vegetable oil
  • 2 teaspoons all-purpose flour, or as needed
  • 2.5 cups cold beef broth
  • 2 teaspoons aged balsamic vinegar, or to taste
  • 4 kummelweck dinner rolls, split
  • 0.25 cup extra-hot prepared horseradish, or to taste
Instructions:
  • Generously coat the beef with a perfect balance of salt and black pepper.
  • In a large skillet over medium-high heat, sear the beef roast in hot oil until it's evenly browned on all sides, about 4 to 5 minutes per side. Use an instant-read thermometer to check that the center reads 125°F (52°C). Once done, transfer the beef to a plate to rest.
  • Whisk flour into the skillet off the heat until the raw taste disappears, approximately 1 minute. Pour in cold beef broth and return skillet to medium-high heat. Stir in balsamic vinegar, black pepper, and any juices from the roast beef plate. Let the mixture simmer until the jus thickens slightly, about 5 minutes. Season with salt to taste.
  • Thinly slice the sirloin against the grain. Layer the meat onto the bottom of each roll. Spread a generous amount of horseradish on the top bun and assemble the sandwich. Serve with au jus for dipping.
