Chef John's Beef Rouladen

Beef rouladen: Thin beef slices rolled with mustard, onions, bacon, and pickles, braised until tender. Traditional German comfort dish by Chef John.
Ingredients:
  • 2 (6 ounce) (1/4 inch thick) slices of beef round
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons Dijon mustard
  • 4 strips bacon
  • paprika, or to taste
  • 0.5 onion, sliced into half-rings and separated
  • 6 dill pickle spears
  • 1 tablespoon vegetable oil
  • 0.25 cup all-purpose flour
  • 3 cups beef broth
  • salt to taste
Instructions:
  • Lay out beef slices, season with salt and pepper. Spread mustard on one side, then top with bacon, paprika, onions, and 3 pickle slices each. Leave a 1-inch strip at one end for rolling.
  • Starting from the wider end of the meat slice, carefully roll it up, ensuring all ingredients stay inside. Roll tightly for a perfect shape. Secure the rolls with 3 loops of butcher's twine - one in the middle and one at each end, keeping the seam side down. Trim off any extra twine.
  • In a large saucepan, heat vegetable oil over medium-high heat. Sear beef on all sides until nicely browned, about 8 minutes. Transfer beef to a plate. Lower heat to medium-low, add butter to the pan, and stir in flour; cook for 1 minute. Gradually pour in cold beef broth, whisking constantly until smooth. Increase heat to medium-high and simmer until sauce thickens slightly, about 1 minute.
  • Place beef rolls and all the delicious juices into the pan. Let it simmer gently on very low heat, covered, turning the rolls every 20 minutes until the beef becomes tender, which should take about 1 1/2 hours. Test if the meat is done by checking if a sharp knife easily pierces through the beef roll.
  • Let meat rest in a dish. Increase heat to high and simmer cooking liquid until slightly thickened into a delicious gravy, about 1 minute. Serve rouladen topped with gravy.
