Indulge in Chef John's rich black lentil soup with beluga lentils, bacon, and aromatic spices for a hearty and flavorful experience.
Ingredients:
  • 1 cup diced celery
  • 0.5 teaspoon ground cumin
  • 2 teaspoons vegetable oil
  • 4 ounces bacon, chopped
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 0.25 teaspoon dried thyme
  • 1 pinch cayenne pepper, or to taste
  • 1.25 cups black beluga lentils
  • 5 cups chicken broth, or as needed
  • 0.25 cup chopped fresh flat-leaf parsley, divided
  • 1 teaspoon extra-virgin olive oil, or as needed
Instructions:
  • In a large pot over medium heat, sizzle bacon in vegetable oil until crispy, for about 5 to 7 minutes. Stir in onion, carrots, celery, and salt, and sauté until onion is soft and translucent, which should take around 10 minutes. Season the mixture with black pepper, cumin, thyme, and cayenne pepper.
  • Incorporate lentils into the bacon mixture, ensuring they are fully coated in the savory bacon fat. Introduce chicken broth and a fragrant bay leaf, and let the mixture come to a gentle simmer. Lower the heat and simmer gently, adjusting with more broth if necessary, until lentils reach a tender perfection, around 45 minutes to an hour.
  • Season to taste with a flavorful blend of salt, black pepper, and cayenne pepper. Gently fold in 3 tablespoons of fresh parsley.
  • Serve the soup in bowls, garnish with the rest of the parsley, and finish with a drizzle of extra-virgin olive oil.
