Whip up a scrumptious blackberry buckle with almond and cinnamon flavors. Perfect with a scoop of vanilla ice cream for a delightful summer treat!
Ingredients:
  • 3 cups fresh blackberries
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 0.75 cup white sugar
  • 0.5 cup almond meal
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 pinch ground cinnamon
  • 1 cup milk
  • 7 tablespoons butter, divided
  • 3 tablespoons sliced almonds, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Combine ripe blackberries with a touch of sweet sugar and aromatic vanilla extract in a bowl; allow to sit and infuse flavors for 15 to 20 minutes.
  • Combine flour, 3/4 cup sugar, almond meal, baking powder, salt, and cinnamon in a bowl. Gently mix in milk until just combined.
  • In a skillet over medium-high heat, melt 6 tablespoons of butter. Pour this luscious melted butter into an 8x12-inch baking dish. Then, carefully pour the batter over the butter and delicately spread it with a spatula, ensuring a 1-inch buttery border remains visible around the edges of the dish.
  • Sprinkle blackberries evenly over the batter, then drizzle any remaining blackberry juices on top.
  • Bake the buckle in the preheated oven until it is crisped and browned around the edges, which should take about 1 hour.
  • In a small skillet over medium-high heat, melt the remaining butter. Cook and stir almonds in the hot butter until golden brown and toasted, about 2 to 3 minutes. Sprinkle the toasted almonds over the blackberry buckle and let the buckle cool to room temperature.
