Whip up Chef John's irresistible blueberry cornbread for a simple and delicious treat using fresh blueberries.
Ingredients:
  • 2 large eggs
  • 1 cup white sugar
  • 1 cup milk
  • 1 cup buttermilk
  • 12 tablespoons unsalted butter, melted
  • 2 cups all-purpose flour
  • 2 cups cornmeal
  • 4 teaspoons baking powder
  • 2 teaspoons fine salt
  • 4 cups fresh blueberries
Instructions:
  • Collect all your ingredients. Preheat the oven to 400°F (200°C) and generously butter a 9x13-inch baking dish.
  • In a bowl, vigorously whisk together eggs and white sugar for 1 minute. Add milk, buttermilk, and melted butter, then mix until well combined.
  • Combine flour, cornmeal, baking powder, salt, and baking soda in a separate bowl.
  • Mix the dry ingredients gently into the wet mixture, then carefully add the blueberries.
  • Pour the batter into the prepared baking dish.
  • Bake in the preheated oven until a skewer inserted into the center comes out clean, for 50 to 60 minutes. Allow to cool before slicing and serving.
