Deliciously moist blueberry muffins bursting with flavor from juicy blueberries and tangy sour cream. Enjoy them warm for the perfect treat.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 2 tablespoons vegetable oil
  • 1 cup sour cream
  • 0.5 cup milk
  • 1 tablespoon grated lemon zest
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.75 teaspoon salt
  • 2 cups fresh blueberries
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a muffin tin by greasing it or lining it with paper liners.
  • In a large bowl, cream together butter and sugar until light and fluffy for about 3 minutes. Mix in eggs until well combined. Stir in vegetable oil. Whisk in sour cream, milk, and lemon zest until smooth.
  • Combine flour, baking powder, baking soda, and salt in a small bowl and whisk until well mixed.
  • Combine half of the flour mixture with the butter mixture, then gently fold in the remaining flour mixture and blueberries until just combined.
  • Fill the muffin cups with the batter using a spoon.
  • Bake muffins in the preheated oven until golden on top and a toothpick inserted into the center comes out clean, for approximately 30 minutes.
