Flaky golden biscuits made with cold butter and extra folds for ultimate tenderness.
Ingredients:
  • 0.25 teaspoon baking soda
  • 7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
  • 0.75 cup cold buttermilk
  • 2 tablespoons buttermilk for brushing
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a baking sheet with a silicone baking mat or parchment paper.
  • In a large bowl, combine flour, baking powder, baking soda, and salt. Add cold butter slices and use a pastry blender to mix until mixture resembles coarse crumbs.
  • Create a crater in the middle of the mixture. Fill it with cold buttermilk and delicately mix until just combined.
  • Transfer the dough onto a floured work surface and gently shape it into a rectangle.
  • Fold the rectangle into thirds, then rotate the dough halfway, collecting any loose crumbs, and press it back into a rectangle shape. Repeat this process two more times, folding and pressing the dough a total of three times.
  • Roll out the dough on a floured surface to a thickness of 1/2 inch. Use a 2 1/2-inch round biscuit cutter to cut out 12 biscuits, rerolling any scraps as needed.
  • Place the biscuits on the baking sheet and gently make an indent on the top of each with your thumb. Brush the tops with buttermilk.
  • Bake in the preheated oven until biscuits turn flaky and golden brown, approximately 15 minutes.
