Crispy and tender buttermilk fried chicken made by soaking chicken in buttermilk, coating with seasoned flour, and frying to perfection.
Ingredients:
  • 1 (3 1/2) pound chicken, cut into 8 pieces
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon white pepper
  • 0.25 teaspoon dried rosemary
  • 0.25 teaspoon ground thyme
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried sage
  • 0.25 teaspoon cayenne pepper
  • 2 cups buttermilk
  • 2 cups flour
  • 0.5 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2.5 quarts peanut oil for frying
Instructions:
  • Assemble all ingredients.
  • Combine chicken pieces with a blend of savory herbs and spices in a large bowl, ensuring even distribution.
  • Mix in the tangy buttermilk until the chicken is fully coated. Chill in the refrigerator for 6 hours, allowing the flavors to meld and marinate.
  • In a large shallow dish, mix together flour, salt, paprika, cayenne, garlic powder, white pepper, and onion powder.
  • Take the chicken out of the buttermilk and coat each piece in seasoned flour; gently shake off any extra flour and place on a plate.
  • In a large Dutch oven, bring the peanut oil to a sizzling 350 degrees F (175 degrees C).
  • Fry chicken pieces in hot oil for 10 minutes on each side until a thermometer reads 165 degrees F (74 degrees C).
  • Place the fried chicken on a cooling rack over a paper towel-lined baking sheet. Allow it to rest for 10 minutes before enjoying.
