Delicious summer dessert using seasonal fruits for easy panna cotta with minimal prep time, perfect for any occasion.
Ingredients:
  • 1 (.25 ounce) envelope unflavored gelatin
  • 3 tablespoons cold water
  • 2.5 cups heavy cream
  • 0.5 cup white sugar
  • 3 strips lemon peel
  • 0.5 pinch kosher salt
  • 0.125 teaspoon vanilla extract
  • 0.5 cup buttermilk
  • 1 tablespoon fresh lemon juice
Instructions:
  • Sprinkle gelatin over cold water and let it sit for 5-10 minutes until thickened and rubbery. Stir gently.
  • In a saucepan, combine heavy cream and sugar, then heat over medium heat until it almost simmers, about 3 to 5 minutes. While heating, add lemon peel. Once tiny bubbles appear, remove from heat. Stir in a pinch of salt, vanilla, and bloomed gelatin until melted. Whisk in buttermilk and lemon juice until well combined.
  • After straining through a fine sieve to remove zest and any lumps, divide the mixture into serving dishes or ramekins. Let it cool to room temperature, then cover with plastic wrap and refrigerate for at least 5 hours, preferably overnight.
