Indulge in a stunning Buttermilk Pie with a burst of tangy flavors in every creamy bite.
Ingredients:
  • 1 prepared dough for 1 (9-inch) single crust pie
  • 0.5 cup unsalted butter, room temperature
  • 1.5 cups white sugar
  • 3 tablespoons all-purpose flour
  • 0.25 teaspoon kosher salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon freshly grated nutmeg
  • Zest from 1 lemon
  • Juice from 1 lemon
  • 1 cup buttermilk
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Roll out the pie dough to fit the pie dish with a slight overhang. Gently transfer and fit the dough into the dish. Trim excess dough. Fold and crimp the edge for reinforcement. Prick the bottom and sides with a fork about 10 times and line with parchment paper. Fill with pie weights or dried beans to prevent bubbling during baking.
  • After baking for 15 minutes in the preheated oven, gently lift the weights from the pan using the edges of the parchment paper. Let the crust cool completely before moving on.
  • In a mixing bowl, combine butter and sugar until smooth using a spatula for about 4-5 minutes. Add flour and salt, mix until combined. Incorporate 3 eggs until slightly blended. Finally, whisk vigorously until the mixture is smooth and creamy.
  • Combine vanilla extract, nutmeg, lemon zest, lemon juice, and buttermilk in a bowl. Whisk for 2-3 minutes until well combined. Pour the mixture into the pie shell.
  • Bake in the oven preheated to perfection until beautifully golden and just set, for 45 to 55 minutes. The pie should have a gentle wiggle, not a soupy jiggle. Allow it to cool to room temperature, then chill in the refrigerator for 1 to 2 hours.
