Tender chicken in a tangy-spicy sauce inspired by The Slanted Door's famous dish from San Francisco.
Ingredients:
  • 0.75 cup dark brown sugar
  • 0.33333334326744 cup cold water
  • 0.33333334326744 cup fish sauce
  • 0.33333334326744 cup rice vinegar
  • 1 tablespoon soy sauce
  • 4 cloves garlic, crushed
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon vegetable oil
  • 8 boneless, skinless chicken thighs, quartered
  • 0.5 cup roasted peanuts
  • 2 fresh jalapeno peppers, seeded and sliced
  • 1 bunch green onions, chopped
  • fresh cilantro sprigs, for garnish
Instructions:
  • Combine brown sugar, water, fish sauce, rice vinegar, soy sauce, garlic, and ginger in a bowl and whisk until the brown sugar is fully dissolved, approximately 1 minute. Set aside.
  • Start by heating oil in a skillet over high heat, then add the chicken and stir.
  • Drizzle 1/3 cup of the brown sugar mixture over the chicken, stirring continuously until it thickens to a syrupy consistency, about 6 to 7 minutes.
  • Pour in the rest of the brown sugar mixture and cook until the chicken is tender and fully cooked, approximately 5 minutes.
  • Add peanuts, jalapenos, and green onion to the mixture and cook for 2 to 3 minutes until warmed through.
  • Finish off with a fresh sprinkle of vibrant cilantro before serving.
