Indulgent cheese blintzes with lemony ricotta filling, ideal for a decadent brunch, paired perfectly with a tangy berry sauce.
Ingredients:
  • 1 cup milk
  • 1 cup all-purpose flour
  • 0.25 cup cold water
  • 2 tablespoons vegetable oil
  • 1 tablespoon white sugar
  • 0.25 teaspoon vanilla extract
  • cooking spray
  • 1 tablespoon butter, or as needed
  • 1.5 cups ricotta cheese, strained if wet
  • 0.5 cup cream cheese, at room temperature
  • 3 tablespoons powdered sugar, divided, or more as needed
  • 1 medium lemon, zested
Instructions:
  • Assemble all the ingredients needed for the recipe.
  • Prepare the batter: Place milk, flour, water, eggs, oil, sugar, salt, and vanilla in a blender. Blend for 1-2 minutes until smooth, scraping the sides as needed. Allow the batter to rest at room temperature for 30 minutes.
  • Prepare the filling by combining ricotta cheese, cream cheese, egg, 2 tablespoons powdered sugar, lemon zest, and salt in a mixing bowl. Whisk until well blended and refrigerate until ready to use.
  • After letting the batter rest, warm up a 10-inch nonstick skillet over medium-high heat. Give it a quick spray of cooking oil and pour in approximately 1/4 cup of batter.
  • Swirl batter in skillet until surface appears dry, approximately 1 minute.
  • Gently flip the crêpe and cook the other side for about 30 seconds. Then, transfer it to a plate and repeat the process to cook and stack the rest of the crêpes.
  • Preheat your oven to 325°F (165°C) and lightly grease a baking dish.
  • Place a generous amount of filling, about 3 to 4 tablespoons, onto each crêpe, leaving a 1-inch space from the edge closest to you. Gently fold the edge over the filling and press down slightly.
  • Fold both sides of the crêpe towards the center, then roll it into a small rectangle filled with your desired ingredients, ensuring the seam is at the bottom.
  • In a large skillet over medium heat, melt butter. Cook blintzes in batches, turning gently, until golden brown on each side, approximately 1 minute per side. Transfer to the prepared baking dish.
  • Place in the preheated oven until the filling is firm, approximately 12 minutes.
  • Let the blintzes cool for 10 minutes, then sprinkle them with a light dusting of the remaining powdered sugar before serving.
