Juicy chicken breasts with sauteed mushrooms make a delectable and easy meal.
Ingredients:
  • 2 chicken breast halves, boneless, skin-on
  • 2 tablespoons olive oil
  • 8 ounces fresh mushrooms, sliced 1/4 inch thick
  • 1 pinch salt
  • 0.5 cup water
Instructions:
  • Assemble all your ingredients.
  • Preheat oven to 400°F (200°C) to get it nice and hot for baking.
  • Season the chicken generously with salt and freshly ground black pepper.
  • Warm olive oil in a skillet over medium-high heat, then place chicken skin-side down and sear until golden brown, approximately 5 minutes.
  • Flip the chicken and toss mushrooms with a pinch of salt in the skillet. Crank up the heat to high and sauté the mushrooms until they shrink a bit, around 5 minutes, stirring occasionally.
  • Place the skillet in the preheated oven and bake for 15 to 20 minutes until the chicken is fully cooked and the juices run clear. Make sure the internal temperature reaches 165 degrees F (74 degrees C) using an instant-read thermometer. Then, transfer the chicken breasts to a plate and cover loosely with foil. Let it rest.
  • Place skillet on the stovetop over medium-high heat. Sauté mushrooms until browned bits form on the bottom of the pan, about 5 minutes. Deglaze the pan by pouring water in and bringing to a boil while scraping off the browned bits. Reduce water by half, approximately 2 minutes. Remove from heat.
  • Incorporate any flavorful juices from the chicken into the skillet. Stir in butter to the mushroom mixture, ensuring it melts and blends in smoothly.
  • Season chicken with a sprinkle of salt and pepper. Drizzle chicken with mushroom sauce and plate it for serving.
