Flavorful Italian chicken with peppers, mushrooms, and herbs in one delicious dish.
Ingredients:
  • 1 whole roasting chicken, cut in quarters
  • 1 large onion, sliced
  • 8 ounces fresh mushrooms, quartered
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 4 cloves garlic, sliced
  • 3 sprigs rosemary
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes, or to taste
  • 1 cup tomato sauce
  • 0.5 cup water
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large Dutch oven over medium-high heat, sizzle the chicken in olive oil until beautifully browned. Transfer to a bowl to capture all the flavorful juices.
  • Saute onions and mushrooms until soft, around 5-6 minutes. Season with a generous pinch of salt and pepper. Mix in minced garlic, fresh rosemary, red pepper flakes, dried oregano, tomato sauce, and water.
  • Arrange the succulent chicken pieces over the flavorful cooked vegetables along with any delicious juices. Season with an extra sprinkle of salt and pepper, then top it all off with vibrant slices of pepper.
  • Allow the dish to bake in the preheated oven for 1 hour and 15 minutes.
