Tantalizing New York-style chicken French in zesty lemon white wine sauce by Chef John.
Ingredients:
  • 1 cup all-purpose flour
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 pinch cayenne pepper
  • 1.5 pounds skinless, boneless chicken breast cutlets, pounded flat
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup vegetable broth
  • 0.5 cup dry sherry
  • 2 lemons, juiced
  • 0.25 cup cold butter, cut into chunks
  • 1 tablespoon chopped fresh flat-leaf parsley
Instructions:
  • In a shallow bowl, combine eggs and milk. In another shallow bowl, whisk together flour, salt, black pepper, and cayenne pepper.
  • Coat chicken in flour mixture, ensuring it's fully covered; shake off any extra flour. Dip chicken into egg mixture, ensuring full coverage.
  • In a large skillet over medium heat, combine olive oil and butter. Sear chicken until golden brown on each side, about 2 to 3 minutes per side. Place chicken on a plate.
  • In the same skillet, combine vegetable broth, sherry, and lemon juice. Bring to a boil and simmer until the sauce reduces by half. Remove from heat, add cold butter chunks, and stir until the sauce is glossy and thickened, about 1-2 minutes. Fold in parsley, then season with salt and pepper to taste.
  • Place the chicken back in the skillet over medium heat, generously spoon the sauce over it, and cook until the chicken is heated through and fully cooked, typically for 1 to 3 minutes.
