Chef John's Chicken Lazone

Indulgent Cajun-style chicken Lazone with creamy pan sauce, inspired by Chef Lazone Randolph's New Orleans classic.
Ingredients:
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 4 large boneless skinless chicken breasts
  • 1 1/2 teaspoons kosher salt, or to taste
  • 1 tablespoon vegetable oil
  • 1/2 lemon, juiced
  • 2/3 cup heavy cream
  • 1/3 cup water
  • 1/4 cup sliced green onions
  • 1 tablespoon cold butter, cubed
Instructions:
  • Combine chili powder, smoked paprika, cayenne, black pepper, garlic powder, and onion powder in a small bowl; set aside. Half will be used for the chicken rub and half for the sauce.
  • Season the chicken evenly with salt, sprinkle both sides with half of the spice mixture, and refrigerate for at least 1 hour or up to overnight before cooking.
  • In a sturdy nonstick pan, heat oil over medium-high heat. Sear chicken for 3 to 4 minutes per side until 75% cooked. Chicken will finish cooking in the sauce. Remove chicken from pan and set aside.
  • Add the remaining spice mixture to the hot oil in the pan and stir for 30 seconds. Pour in the lemon juice, cream, and water, then sprinkle in a pinch of salt.
  • Simmer the sauce over medium-high heat until it thickens, then lower the heat and add the chicken back to the pan. Cook gently, turning them in the sauce until no longer pink in the center, for about 8 to 10 minutes. Use a meat thermometer to ensure it reaches 165°F (74°C).
  • Lower the heat and incorporate the green onions and butter into the sauce. Stir well, making sure to baste the chicken with the delicious sauce. Lastly, taste for seasoning and enjoy your meal.
