A tantalizing twist on P.F. Chang's® chicken lettuce wraps - perfect for a meal or appetizer!
Ingredients:
  • 1.5 pounds skinless, boneless chicken thighs, coarsely chopped
  • 1 (8 ounce) can water chestnuts, drained and minced
  • 1 cup diced shiitake mushroom caps
  • 0.5 cup minced yellow onion
  • 0.33333334326744 cup chopped green onion
  • 1 tablespoon soy sauce
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons brown sugar
  • 0.25 cup chicken stock
  • 0.25 cup rice wine vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon ketchup
  • 2 teaspoons sesame oil
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon dry mustard
  • 2 tablespoons vegetable oil
  • 1.5 tablespoons chopped fresh cilantro, or to taste
  • 1.5 tablespoons chopped fresh basil, or to taste
  • 1.5 tablespoons chopped green onion, or to taste
  • 16 leaves iceberg lettuce, or as needed
Instructions:
  • Combine chicken, water chestnuts, mushrooms, yellow onion, 1/3 cup green onion, soy sauce, ginger, and brown sugar in a bowl. Press mixture down, cover with plastic wrap, and refrigerate until needed.
  • Combine chicken stock, rice wine vinegar, garlic, ketchup, 1 tablespoon soy sauce, sesame oil, brown sugar, red pepper flakes, and dry mustard in a bowl and whisk until the glaze is thoroughly mixed.
  • In a heavy nonstick skillet over high heat, sizzle the chicken mixture in vegetable oil until it's no longer pink, for about 2 minutes. Add half of the glaze mixture and continue cooking on high heat until the chicken turns golden brown and caramelizes, about 10-15 minutes.
  • Turn the heat down to medium-low, add the rest of the glaze to the chicken, and simmer until warmed and slightly thickened, for about 3 minutes. Mix in cilantro, basil, and 1 1/2 tablespoons of green onion. Place the chicken in a bowl and enjoy with lettuce wraps.
