Chef John's Hungarian chicken paprikash: Sweet paprika and creamy sauce for comforting flavor.
Ingredients:
  • 8 (5 ounce) bone-in, skin-on chicken thighs
  • salt to taste
  • 2 tablespoons olive oil
  • 2 medium yellow onions, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 teaspoons all-purpose flour
  • 1 teaspoon kosher salt, or to taste
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 0.25 cup sweet Hungarian paprika
  • 1 pinch cayenne pepper
  • 2 cups chicken broth
  • 0.66666668653488 cup sour cream, room temperature
  • 0.25 cup heavy whipping cream
Instructions:
  • Generously season chicken with salt. In a heavy, deep-sided pan with a lid, heat olive oil over high heat. Brown chicken skin-side down for 5 minutes, then flip and sear for an additional 3 to 4 minutes. Remove chicken from pan and set aside; skim excess fat if desired.
  • Saute onions with a pinch of salt in the pan over medium heat until golden, about 5 minutes. Stir in garlic, tomato paste, and flour, cooking and stirring for an additional 3 to 4 minutes until a tomato roux forms. Add kosher salt, black pepper, smoked paprika, and sweet paprika, cooking for 1 minute. Pour in chicken broth and bring to a simmer over high heat.
  • Lower the heat to medium-low, and return the chicken along with its juices to the pan. Brush the tops with the sauce, cover the pan, and simmer while occasionally basting the chicken until cooked through and tender, which should take 45 to 60 minutes. Once done, transfer the chicken to a plate.
  • If desired, remove some fat from the top of the sauce. Stir in heavy cream and sour cream, then bring to a gentle simmer, stirring occasionally. Return the chicken and any juices to the sauce. Simmer without covering, basting regularly, until chicken is heated through and exceptionally tender, for about 10 minutes. Taste and adjust seasoning to your liking.
