Ingredients:
  • 1 3/4 cups all-purpose flour
  • 1 1/4 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 can (15-ounce) pumpkin puree (NOT pumpkin pie filling)
  • 1/2 cup granulated white sugar
  • 3/4 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons milk
  • 2 large eggs
  • 1/2 cup dark or semi-sweet chocolate chips
  • 1/4 cup pumpkin seeds
Instructions:
  • Preheat your oven to a cozy 350 degrees F (180 degrees C) and generously butter a 9x5-inch loaf pan.
  • Combine flour, salt, baking soda, cinnamon, ginger, cloves, and nutmeg in a bowl and whisk until well blended.
  • In a separate bowl, blend together pumpkin, white sugar, brown sugar, vegetable oil, milk, and eggs until smooth.
  • Gently incorporate the flour mixture until almost fully combined. Mix in the chocolate chips and pumpkin seeds until evenly spread throughout.
  • Transfer the batter into the loaf pan using a spatula, then tap the pan on the table to bring air bubbles to the surface.
  • Bake in the preheated oven for 60 to 70 minutes or until a toothpick inserted near the center comes out clean.
  • Cool the mixture in the pan for approximately 45 minutes, then transfer it to a wire rack to cool completely before slicing.
