Indulge in decadent chocolate energy bars with dates, nuts, and coconut. A cost-effective alternative to store-bought options.
Ingredients:
  • 2 cups pitted Medjool dates, roughly chopped
  • 2 cups raw cashews
  • 1 cup raw or roasted unsalted almonds
  • 0.75 cup high-quality unsweetened cocoa powder (such as Guittard® Cocoa Rouge)
  • 0.5 cup unsweetened shredded coconut
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon cold espresso, or more as needed (or water)
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon kosher salt
  • 0.5 pinch cayenne pepper
Instructions:
  • Combine dates, cashews, almonds, cocoa powder, shredded coconut, coconut oil, cold espresso, vanilla, salt, and cayenne in a food processor. Pulse initially before processing for about 1 minute until the mixture is sticky and moist. Add extra coffee if necessary and blend until a chunky mass forms.
  • Prepare a baking pan by lining it with plastic wrap. Transfer the mixture into the pan and use a spatula to press it down evenly. Cover with another layer of plastic wrap and smooth the surface with your hands. Chill in the refrigerator until firm, about 2 to 3 hours.
  • Take the bars out of the pan and gently unwrap them before slicing into 12 delicious pieces.
