Indulgent chocolate lava cakes with irresistible molten centers - a guaranteed crowd-pleaser!
Ingredients:
  • 2 egg yolks
  • 2 eggs
  • 3 tablespoons white sugar
  • 3.5 ounces chopped dark chocolate
  • 5 tablespoons butter
  • 4 teaspoons unsweetened cocoa powder
  • 3 tablespoons flour
  • 1 pinch salt
  • 0.125 teaspoon vanilla extract
Instructions:
  • Coat the interiors of four 5 1/2-ounce ramekins with a generous amount of butter.
  • Whisk egg yolks, eggs, and sugar in a bowl until pale, fluffy, and a lemony hue is achieved.
  • In a microwave-safe bowl, gently melt the chocolate and butter in 30-second intervals, stirring between each interval, for 1 to 3 minutes until smooth.
  • Combine the melted chocolate mixture with the egg and sugar mixture until smooth. Add cocoa powder and mix well. Follow with flour, salt, and vanilla, stirring into a smooth batter.
  • Pour batter into a resealable plastic bag and cut off a corner to make a tip. Squeeze batter into the ramekins, tap gently to remove air bubbles, then chill for 30 minutes.
  • Preheat the oven to a toasty 425°F (220°C).
  • Place the chilled ramekins in a casserole dish and carefully add hot tap water until it reaches halfway up the sides of the ramekins.
  • After preheating the oven, bake for 15-18 minutes until golden brown. Allow to cool for 15 minutes before serving.
  • Gently run a knife around the edges of each ramekin to release the cakes. Flip the cakes onto serving plates and sprinkle with powdered sugar.
