Indulgent beef stroganoff with chuck roast, mushrooms, and white wine, finished off with a creamy touch of crème fraîche.
Ingredients:
  • 2 pounds beef chuck roast, cut into 1/2-inch thick strips
  • 8 ounces sliced mushrooms
  • 0.5 medium onion, sliced or diced
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1.5 tablespoons all-purpose flour
  • 0.5 cup white wine
  • 2 cups beef broth, divided
  • 0.75 cup creme fraiche
  • 1 tablespoon fresh chopped chives
Instructions:
  • Generously season beef with salt and pepper.
  • In a piping hot large skillet, add oil until it shimmers. Add beef and stir constantly for 6 to 7 minutes until all liquid evaporates and meat browns beautifully.
  • Set meat aside. Saute mushrooms, onions, and butter in the same pan until vegetables are golden brown.
  • Sauté garlic for 30 seconds, then add flour and cook for 1 to 2 minutes until combined. Pour in wine and 1 cup of broth, deglaze the pan. Simmer until sauce thickens, about 3 to 4 minutes.
  • Add the beef back into the pan and incorporate the remaining cup of broth. Bring to a gentle simmer and cook on low heat with the lid on for approximately 1 hour until the beef is tender and the sauce has thickened, remembering to stir every 20 minutes.
  • Add the crème fraîche and chives, then season to taste with salt and pepper.
  • Enjoy while the dish is still hot!
