Savory deli-style macaroni salad with crisp veggies, ideal for picnics and BBQs.
Ingredients:
  • 1 cup mayonnaise
  • 0.25 cup white vinegar
  • 2 tablespoons Dijon mustard
  • 2 teaspoons kosher salt, or more to taste
  • 0.125 teaspoon cayenne pepper
  • 1 tablespoon white sugar, or more to taste
  • 1 cup finely diced celery
  • 0.75 cup diced red bell pepper
  • 0.5 cup grated carrot
  • 0.5 cup chopped green onions, white and light parts
  • 0.25 cup diced jalapeno pepper
  • 0.25 cup diced poblano pepper
  • 1 (16 ounce) package uncooked elbow macaroni
  • 1 tablespoon water
  • 1 tablespoon mayonnaise
Instructions:
  • Combine mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne in a bowl and whisk until smooth. Add sugar, then mix in celery, bell pepper, carrot, green onions, jalapeño pepper, and poblano pepper. Refrigerate until ready to mix with macaroni.
  • 1. Boil generously salted water in a large pot. 2. Cook macaroni in the boiling water, stirring occasionally, until al dente, about 8 minutes. 3. Drain macaroni without rinsing.
  • Drain macaroni in a colander for 5 minutes, shaking occasionally to remove excess moisture. Transfer to a large bowl, separate the macaroni, and cool to room temperature for 10-15 minutes until slightly sticky.
  • Coat macaroni with dressing, mixing well. Chill for at least 4 hours, or ideally overnight for maximum flavor infusion.
  • Before serving, gently toss the salad to evenly distribute the remaining mayonnaise and water for a vibrant appearance.
