Impressively easy dark chocolate mousse with a kick of hot chile for extra flavor.
Ingredients:
  • 3.5 ounces dark chocolate, chopped
  • 1 tablespoon butter
  • 2 tablespoons water
  • 0.125 teaspoon ground dried chipotle pepper
  • 1 tiny pinch salt
  • 2 large egg yolks
  • 1 tablespoon white sugar
  • 0.5 cup heavy whipping cream, chilled
  • 1 tablespoon heavy whipping cream, chilled
Instructions:
  • Simmer water in a saucepan over low heat. Combine chocolate, butter, 2 tablespoons water, ground chipotle pepper, and salt in a heatproof bowl. Place the bowl over the simmering water and stir gently until the mixture is smooth and shiny. Let it cool for a few minutes before using.
  • In a separate heatproof bowl, whisk together egg yolks, 2 tablespoons of water, and sugar over a pot of simmering water until the mixture is foamy and warm, around 3 minutes. Pour the hot egg mixture into the chocolate mixture, whisk until smooth, and place the bowl over a larger bowl filled with ice to cool down. Stir continuously until the mixture reaches room temperature or slightly cooler.
  • In a chilled metal bowl, whisk together 1/2 cup plus 1 tablespoon of cold cream until soft peaks form. Gently fold half of the whipped cream into the cooled chocolate mixture, then repeat with the remaining half until streaks disappear. Divide the mousse evenly into 4 6-ounce ramekins.
  • Wrap each ramekin with plastic wrap and chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
