Grilled lamb chops seasoned with Mediterranean spices, cinnamon, and served with orange-mint sauce.
Ingredients:
  • 2 pounds lamb loin chops
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon mixed herbs - Italian, Greek, or French blend
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon cinnamon
  • 1 pinch cayenne pepper
  • 0.25 cup orange marmalade
  • 1 pinch hot chili flakes
  • 0.5 tablespoon rice vinegar
  • 1 tablespoon chopped fresh mint
Instructions:
  • In a large bowl, coat lamb chops with a flavorful blend of olive oil, garlic, cumin, mixed herbs, pepper, coriander, cinnamon, cayenne, and salt. Ensure the chops are fully coated. Cover and refrigerate for a minimum of 4 hours to marinate.
  • Preheat an outdoor grill to high heat, lightly oil the grate, and place lamb chops on the grill. Season the chops with a pinch of salt. Grill until seared on the first side for 4 to 7 minutes, adjusting time according to chop size. Rotate the chops halfway through and then grill the other side for another 4 to 7 minutes, until desired doneness. For medium rare, use an instant-read thermometer to check for 125 to 130 degrees F (54 degrees C) in the center. Transfer the grilled lamb chops to a serving dish and loosely tent with foil.
  • Combine the marmalade, chili flakes, mint, and rice vinegar in a bowl and mix well.
  • Coat the chops generously with sauce and plate them up to enjoy.
