Chef John's easy homemade garlic-parmesan croutons add a delicious crunch to salads and soups.
Ingredients:
  • 0.5 cup olive oil
  • 4 cloves garlic, finely minced
  • 1 (8 ounce) loaf French bread baguette, cut into 1/2-inch cubes
  • 0.75 cup finely grated Parmigiano-Reggiano cheese, divided
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon paprika
  • 0.5 teaspoon freshly ground black pepper
Instructions:
  • Preheat the oven to 300°F and prepare a baking sheet with a silicone baking mat.
  • Combine the olive oil and garlic in a bowl, allowing the flavors to develop at room temperature for 3 hours.
  • In a large bowl, combine bread cubes and strain garlic oil over them, tossing to coat. Add 1/2 cup Parmigiano-Reggiano cheese, Italian seasoning, paprika, black pepper, salt, and cayenne pepper, tossing to coat evenly. Spread coated bread cubes in a single layer on a baking sheet.
  • 1. Bake in the preheated oven for 15 minutes, then flip croutons and bake for an additional 15 minutes. 2. Use a spatula to create a rectangular shape with the croutons, sprinkle the remaining 1/4 cup cheese on top. 3. Bake until cheese is melted and croutons are crispy, about 10-15 minutes.
