Chef John's Homemade Eggnog

Indulge in rich, creamy homemade eggnog - a step above store-bought versions.
Ingredients:
  • 4 egg yolks
  • 0.33333334326744 cup white sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.75 teaspoon freshly grated nutmeg
  • 2 fluid ounces bourbon whiskey, or more to taste
  • 4 egg whites
  • 1 tablespoon white sugar
  • 1 pinch freshly grated nutmeg
Instructions:
  • Combine egg yolks and sugar in a saucepan until creamy. Add milk and cream, whisk until smooth. Heat mixture on medium, whisking occasionally until it reaches 170 to 180 degrees F (75 to 80 degrees C). Take off heat and stir in nutmeg and whiskey.
  • Cool the pan by placing it in cold water until it reaches room temperature. Then, pour the mixture into a container, preferably a large pitcher. Cover and refrigerate until fully chilled, about 2 to 3 hours.
  • In a bowl, whisk egg whites until soft peaks form. Gradually add sugar and whisk until firm peaks form. Gently fold the egg whites into the custard base until fully combined. Chill in the refrigerator for about 30 minutes before serving.
  • Give the eggnog a final whisk right before serving and in between pours to evenly mix in the egg whites that tend to rise to the surface. Sprinkle with a touch of nutmeg before serving.
