Chef John's Hot Dog Buns

Chef John's irresistible homemade hot dog buns will make you swear off store-bought buns forever.
Ingredients:
  • 1 (.25 ounce) package active dry yeast (such as Fleischmann's RapidRise®)
  • 3.5 cups all-purpose flour, divided, or more as needed
  • 1 cup warm water (105 degrees F/41 degrees C)
  • 3 tablespoons melted butter
  • 3 tablespoons sugar
  • 1.25 teaspoons salt
  • 1 teaspoon olive oil
  • 3 tablespoons melted butter, or as needed
Instructions:
  • Prepare the baking sheet with a silicone mat or parchment paper.
  • In a large stand mixer bowl, combine yeast, 1/2 cup flour, and water. Whisk until smooth. Allow the mixture to sit until it becomes foamy, about 10 to 15 minutes.
  • Incorporate whisked egg, 3 tablespoons of melted butter, sugar, and salt into the yeast mixture, then mix in the rest of the flour.
  • Attach dough hook to stand mixer. Knead dough on low for 5 to 6 minutes until soft and sticky. Scrape sides of bowl as needed. Test dough by poking and prodding with silicone spatula; if lots of dough sticks, add a touch more flour.
  • Place the dough on a floured surface; it should be slightly sticky and elastic without sticking to your fingers. Shape the dough into a smooth round by gently tucking in loose ends.
  • Wipe stand mixer bowl clean, gently drizzle with olive oil, and toss dough to coat lightly. Cover with foil and allow to rise in a warm spot until doubled, approximately 2 hours.
  • Place the dough on a floured surface and shape it into a 5x10-inch rectangle that is 1/2-inch thick. Then, cut the dough into 8 equal pieces. Turn each piece cut-side up and mold them into 5-inch long hot dog bun shapes. Finally, arrange the dough pieces, cut-side up, on the baking sheet spacing them about 1/4-inch apart.
  • Make a shallow slit down the center of each bun. Coat each bun with 2 tablespoons of melted butter. Allow them to rise until almost double in size and the buns touch each other, approximately 45 minutes.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Bake buns until beautifully golden, approximately 20 minutes in the preheated oven. Gently brush the tops with the leftover melted butter.
