Chef John's light lemon curd: A healthier, tangy delight with fewer calories and less fat, without sacrificing flavor.
Ingredients:
  • 3 large eggs
  • 0.66666668653488 cup freshly squeezed lemon juice
  • 1.5 tablespoons freshly grated lemon zest
  • 5 tablespoons unsalted butter at room temperature - cut into 1-tablespoon chunks
Instructions:
  • Fill a saucepan with water, allowing several inches of space at the top. Place over medium heat, bringing it to a boil before lowering the heat to a simmer.
  • In a metal mixing bowl, combine eggs, sugar, and lemon juice. Set the bowl over simmering water and whisk vigorously until the mixture turns fluffy, thick, hot, and silky, for about 8 to 10 minutes.
  • Take the mixture off the heat and gently whisk in fresh lemon zest and unsalted butter until the butter melts smoothly into the velvety lemon curd.
  • Cover the curd's surface with plastic wrap to keep it smooth. Chill in the refrigerator until set, approximately 1 hour. Stir well before serving.
