Slow-roasted pork shoulder results in tender, juicy meat perfect for pulled pork sandwiches.
Ingredients:
  • 2 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 (7 pound) pork shoulder roast
  • Unbleached parchment paper
  • Heavy duty aluminum foil
Instructions:
  • Preheat your oven to a gentle 225 degrees F (110 degrees C).
  • Combine salt, black pepper, paprika, brown sugar, onion powder, garlic powder, and cayenne pepper in a bowl, creating a flavorful seasoning blend.
  • Evenly coat every surface of the pork roast with the rub mixture, gently pressing it in for maximum flavor infusion.
  • Take a 4-foot piece of unbleached parchment and lay the roast at one end. Roll the roast tightly in the parchment. Repeat the process with a second piece of parchment, rolling the roast in the opposite direction.
  • Wrap the parchment-wrapped roast tightly in three layers of heavy-duty aluminum foil, rotating the position of the roast each time. Place the wrapped roast in a roasting pan with folded edges facing up to prevent any leaks.
  • Roast in a preheated oven until tender, approximately 12 1/2 hours (or 1.75 hours per pound of pork).
  • After taking the pan out of the oven, let the covered roast rest for at least an hour before unwrapping. Then, brush the roast with the flavorful juices collected in the parchment paper.
