Try Chef John's flavorful peanut chicken curry for a delightful, easy dinner bursting with unique spices and vibrant colors.
Ingredients:
  • 1 tablespoon kosher salt, plus more to taste
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 2.5 pounds skinless, boneless chicken thighs, cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, chopped
  • 6 cloves garlic, minced
  • 1 tablespoon finely grated fresh ginger
  • 3.5 cups chicken broth, or to taste
  • 0.75 cup unsweetened natural peanut butter
  • 0.5 cup ketchup
  • 1 tablespoon packed brown sugar
  • 1 pound zucchini, cut into chunks
  • 1 medium red bell pepper, cut into chunks
  • 1 medium green poblano pepper, diced
  • 0.5 cup roasted peanuts, plus more for garnish
  • 2 cups hot cooked rice
  • 1 medium lime, cut into wedges
  • 3 tablespoons chopped fresh cilantro, for garnish
Instructions:
  • Prepare the flavorful spice blend by combining salt, coriander, cumin, turmeric, paprika, and cayenne pepper in a small bowl.
  • Prepare the curry: Place the chicken in a large bowl and generously coat it with half of the spice blend until it's fully covered.
  • In a hot, heavy pot, brown half of the chicken in oil until it's golden on all sides, about 5 to 7 minutes. Then transfer it to a bowl and repeat the process with the remaining chicken.
  • Lower the heat to medium, toss in the onion into the chicken drippings, and sauté for 1 to 2 minutes. Introduce the garlic and ginger, cooking until fragrant, which should take about 1 minute. Mix in the remaining spice blend and stir it for 1 minute. Pour in the chicken broth, along with the browned chicken and its juices. Lastly, blend in the peanut butter, ketchup, and brown sugar, and bring everything to a simmer.
  • Lower the heat to keep a gentle, consistent simmer. Simmer for 30 minutes, stirring occasionally. Add zucchini, bell pepper, poblano pepper, and 1/2 cup peanuts; let it simmer until chicken is fully cooked and vegetables are tender when pierced with a fork, which should take 30 to 40 minutes. Remove from heat.
  • Present the flavorful curry on a bed of fluffy rice, adding a zesty squeeze of lime. Decorate with fresh cilantro and extra peanuts to your liking.
