Chef John's Pumpkin Creme Brulee

Seasonal twist: Pumpkin spiced creme brulee.
Ingredients:
  • 3 egg yolks
  • 0.5 cup brown sugar
  • 1 cup heavy cream
  • 1 cup pumpkin puree
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 pinch salt
  • 0.5 cup white sugar
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect temperature to work its magic.
  • Combine egg yolks and brown sugar in a large bowl, then add heavy cream, pumpkin puree, allspice, cinnamon, nutmeg, and salt. Whisk until smooth.
  • Evenly distribute pumpkin mixture among seven (5-inch) ramekins, leaving about 1/2 inch of space from the top.
  • Nestle the ramekins in a baking dish and add hot water until it reaches halfway up their sides.
  • Place in a hot oven until softly set, about 30 to 35 minutes. Take the ramekins out and chill in the fridge until fully cooled, for a minimum of 2 hours.
  • Evenly coat each creme brulee with 1 tablespoon of sugar. Caramelize the sugar using a chef's torch until it forms a crispy, dark brown topping, which should take 1 to 2 minutes. Let it cool before serving.
