Transform ordinary pancakes into a festive holiday breakfast with the addition of pumpkin and warm fall spices.
Ingredients:
  • 2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground allspice
  • 1 egg
  • 1.5 cups milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lemon zest
  • 1 teaspoon vegetable oil
Instructions:
  • In a large mixing bowl, whisk together flour, brown sugar, white sugar, baking powder, baking soda, and salt for 2 minutes to aerate the dry ingredients.
  • In a mixing bowl, blend together pumpkin puree, cinnamon, ginger, allspice, egg, milk, 2 tablespoons vegetable oil, lemon juice, and lemon zest. Gently fold in the flour mixture until just combined. Be careful not to overmix.
  • Heat 1 teaspoon of vegetable oil in a skillet over medium heat until coated evenly.
  • Carefully ladle the batter into the skillet in 1/4 cup increments, then cook the pancakes until they are a beautiful golden brown, approximately 3 minutes per side.
