Indulgent pumpkin pie with creamy filling made using sweetened condensed milk, egg yolks, and fragrant spices by renowned Chef John.
Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 3 egg yolks
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon fine salt
  • 0.25 teaspoon freshly grated nutmeg
  • 0.125 teaspoon Chinese 5-spice powder
  • 1 9-inch unbaked pie crust (see footnote for recipe link)
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • In a large bowl, combine pumpkin, egg yolks, and egg, whisking until smooth. Add sweetened condensed milk, cinnamon, ginger, salt, nutmeg, and Chinese 5-spice powder, whisk until fully combined.
  • Gently place the pie crust in a 9-inch pie plate and create a decorative edge by crimping.
  • Pour the flavorful filling into the buttery crust, then gently tap it on the counter to eliminate any air bubbles.
  • Place in the hot oven and bake for 15 minutes.
  • Lower the oven temperature to 350 degrees F (175 degrees C and bake for an additional 30 to 40 minutes, or until the center is just set. To check, insert a paring knife 1 inch from the edge of the filling - it should come out clean. Let it cool completely before serving.
