Year-round raw pepitas make this brittle a versatile treat, ideal for gifting or adorning pumpkin desserts.
Ingredients:
  • 2 cups raw pumpkin seeds (pepitas)
  • 1.5 teaspoons coarse sea salt
  • 0.5 cup light corn syrup
  • 2 tablespoons water
  • 5 tablespoons unsalted butter
  • 0.5 teaspoon baking soda
Instructions:
  • Prepare a baking sheet by lining it with a silicone baking mat or parchment paper.
  • Combine pumpkin seeds and sea salt in a bowl, mixing well.
  • Combine sugar, corn syrup, and water in a sturdy saucepan over medium-high heat. Mix in butter and bring to a rolling boil while whisking continuously. Boil until the mixture turns a rich golden color, about 10 to 15 minutes. Remove from heat and briskly whisk in baking soda.
  • Combine pumpkin seeds with sugar mixture until fully incorporated. Spread mixture onto a prepared baking sheet. Place a second silicone baking mat on top and press down to flatten evenly. Allow to set for 30 seconds, then remove the top mat. Use a knife to score the surface into your desired shapes. Let cool to room temperature and crack into pieces.
