Delicious pumpkin spice-infused butter cookies with a touch of cinnamon sugar.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon cream of tartar
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ginger
  • 0.25 teaspoon allspice
  • 0.25 teaspoon ground cloves
  • 0.125 teaspoon nutmeg
  • 0.5 cup unsalted butter
  • 0.33333334326744 cup light brown sugar, packed
  • 1 large egg
  • 0.25 cup white sugar
  • 2 teaspoons cinnamon
  • 0.25 cup confectioners' sugar
  • 1 tablespoon milk, or as needed
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a rimmed baking sheet with a silicone mat or parchment paper.
  • In a mixing bowl, combine flour, salt, baking soda, cream of tartar, cinnamon, ginger, allspice, clove, and nutmeg. Whisk for 1-2 minutes until well mixed.
  • Combine butter, sugar, and brown sugar in a separate mixing bowl. Use a spatula or wooden spoon to cream them together until smooth, about 2 to 3 minutes. Mix in vanilla and egg until well combined.
  • Combine the flour mixture with the butter mixture until fully incorporated, being careful not to overmix.
  • Cover the bowl with plastic wrap and let the dough chill in the refrigerator for approximately 1 hour.
  • Combine the cinnamon and sugar in a shallow bowl or plate.
  • Roll the dough into 2 tablespoon balls, coat them in the cinnamon-sugar mixture, shape them into smooth balls, place on a baking sheet lined with parchment paper, leaving 3 to 4 inches of space between each, then gently flatten them.
  • Bake until golden brown in a preheated oven for 10-12 minutes.
  • Allow cookies to cool on baking sheet for 5 minutes, then if desired, dust them with an extra sprinkle of cinnamon-sugar mixture. Transfer the cookies to a cooling rack to reach room temperature.
  • For a shiny finish on your cookies, prepare a simple glaze. Combine confectioners' sugar with milk or lemon juice until it reaches a brushable consistency. Brush the glaze onto the cookies and optionally sprinkle with more cinnamon sugar or pumpkin pie spice.
