Chef John's delectable Russian tea cakes - tender, nutty cookies coated in sweet confectioners' sugar, made with flour, butter, and walnuts.
Ingredients:
  • 1 cup unsalted butter, room temperature
  • 1 cup finely chopped toasted walnuts
  • 1.3333333730698 cups confectioners' sugar, divided
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 cup confectioners' sugar for dusting, or more as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and place a rack in the center position. Line a rimmed baking sheet with a silicone mat.
  • In a large bowl, combine butter, walnuts, 1/3 cup packed powdered sugar, vanilla, and salt. Add 2 cups plus 2 tablespoons flour on top. Use your hands to mix until the dough starts to clump up. Continue mixing until all the flour and butter clumps are evenly incorporated into the dough.
  • Form dough into evenly sized round balls slightly larger than 1 inch and place them 2 inches apart on the baking sheet.
  • Bake in the preheated oven until cookies are lightly golden, about 15 to 25 minutes depending on size.
  • Allow cookies to cool for a precise 5 minutes, then coat warm cookies in 1 cup of confectioners' sugar in a medium bowl. Once cookies have cooled completely, give them another toss in confectioners' sugar.
