Create delicious budget-friendly salmon cakes with canned wild red salmon using Chef John's recipe.
Ingredients:
  • 1 (14.75 ounce) can red salmon, skin and bone removed, drained and flaked
  • 2 eggs
  • 0.5 lemon, juiced
  • 1 tablespoon chopped capers
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 12 saltine crackers
  • 1 tablespoon bread crumbs, or as needed
  • 1 tablespoon butter
  • 1 tablespoon olive oil
Instructions:
  • Combine the salmon, eggs, lemon juice, capers, salt, black pepper, and cayenne pepper in a bowl and mix until fully incorporated.
  • Break saltine crackers by hand and add them to the salmon mixture, ensuring thorough mixing. Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes, or overnight for enhanced flavor.
  • Sprinkle half of the bread crumbs on a plate. Shape the salmon mixture into 4 patties, placing them on the plate. Finish by sprinkling the remaining bread crumbs over the salmon patties.
  • In a large skillet over medium heat, melt butter with oil. Cook patties in the hot mixture until cooked and heated through, around 5 minutes on each side.
