Use canned salmon for Chef John's delicious and simple pantry salmon loaf, full of protein and omegas. Perfect for staying in!
Ingredients:
  • 0.25 cup salted butter
  • 0.33333334326744 cup diced onion
  • 2 (7 ounce) cans red salmon, drained
  • 0.5 cup finely crushed saltine cracker crumbs
  • 0.5 teaspoon kosher salt, or to taste
  • 0.125 teaspoon cayenne pepper
  • 0.25 teaspoon Worcestershire sauce
  • 2 teaspoons rice vinegar
  • 3 large eggs
Instructions:
  • Preheat the oven to 325°F (165°C) and generously butter a loaf pan.
  • Heat butter in a saute pan over medium heat until bubbling. Add onion, shake the pan, and stir with a wooden spoon; cook for 1 minute. Remove from heat and let cool.
  • In a large mixing bowl, combine the salmon with cracker crumbs, salt, cayenne pepper, Worcestershire sauce, rice vinegar, butter, and onions. Use a fork to mash and mix everything together until smooth and well combined.
  • Crack the eggs and place the whites in a clean glass, metal, or ceramic bowl. Add the yolks to the salmon mixture and mix until well combined.
  • Beat egg whites until they form medium stiff peaks. Carefully fold them into the salmon mixture in two batches.
  • Pour the salmon mixture into the loaf pan, use a spatula to even out the top, and gently tap the pan to remove air bubbles.
  • Place the batter in the center of the preheated oven and bake until a toothpick inserted comes out clean, approximately 45 minutes. Allow to rest for 5 minutes before gently transferring the loaf onto a cutting board. Slice and enjoy.
