Chef John's recipe pairs succulent salmon with zesty mango, pepper jam, and lime for a tropical delight.
Ingredients:
  • 1 mango - peeled, seeded and diced
  • 2 tablespoons lime juice
  • 2 tablespoons red bell pepper and ancho chili pepper jam
  • 2 tablespoons chopped fresh cilantro
  • 2 salmon fillets, skin removed
  • sea salt to taste
  • 2 teaspoons vegetable oil
Instructions:
  • Combine the mango, lime juice, pepper jam, and cilantro in a bowl. Cover and refrigerate for 30 minutes to let the flavors meld.
  • Sprinkle salmon fillets with a touch of premium sea salt.
  • In a smoking hot non-stick skillet, sear salmon flesh-side down until edges start to turn opaque, about 2 minutes. Flip, then let the salmon finish cooking off the heat for 2 to 3 more minutes. Serve on a plate and garnish with mango relish.
