Chef John's shrimp tempura creates a crispy, versatile coating perfect for appetizers.
Ingredients:
  • 12 large shrimp, peeled and deveined
  • canola oil for frying
  • 0.25 cup self-rising flour
  • 0.25 cup potato starch
  • 0.5 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 0.5 cup cold sparkling water
  • 0.5 cup prepared dashi stock
  • 0.25 cup mirin
  • 0.25 cup soy sauce
  • 1 pinch white sugar, or to taste
  • grated daikon radish
Instructions:
  • Prepare for a culinary adventure by gathering all your precious ingredients.
  • Pat dry peeled and deveined shrimp on paper towels. Score each shrimp to prevent curling when frying. Chill until ready to use.
  • Preheat oil in a deep fryer to 375°F (190°C) for optimal frying temperature.
  • In a bowl, whisk together self-rising flour, potato starch, salt, and cayenne. Slowly pour in cold water, whisking until a smooth crepe-like batter forms. Dip shrimp in the batter to coat evenly.
  • Fry shrimp in small batches of 6 at a time, ensuring they are crispy and golden brown, for approximately 3 minutes. Then, drain on paper towels.
  • Combine dashi broth, mirin, soy sauce, and sugar to create a flavorful sauce. Grate fresh daikon radish over the top and adjust the taste to your preference.
  • Present succulent shrimp alongside a flavorful dipping sauce for a delightful combination of flavors.
