Irresistible crispy shrimp toasts with a flavorful shrimp and water chestnut paste - perfect for any gathering!
Ingredients:
  • 0.5 pound raw shrimp, peeled and deveined
  • 0.25 cup diced water chestnuts
  • 0.25 cup chopped cilantro leaves
  • 0.5 cup finely sliced green onions, plus more for garnish if desired
  • 3 garlic cloves, crushed
  • 1 tablespoon finely grated ginger root
  • 1 anchovy filet
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon Asian fish sauce
  • 1 tablespoon soy sauce, or more to taste
  • 1 egg white
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon paprika
  • 1 pinch cayenne pepper
  • 1 pinch salt
  • 4 thick slices white bread
  • 1 teaspoon Sesame seeds
  • 1 cup vegetable oil for frying, or as needed
Instructions:
  • In a food processor, combine shrimp, water chestnuts, cilantro leaves, green onions, garlic, grated ginger, anchovy filet, sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne pepper, and salt. Pulse until well blended and until a paste consistency forms, around 1-2 minutes. Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for about 1 hour to allow the flavors to meld.
  • Gently toast bread slices until light golden. Remove crusts from bread. Spread an even layer of shrimp paste on the bread. Cut slices in half, then diagonally into diamonds. Sprinkle with sesame seeds.
  • Heat a heavy skillet with about 1/2 inch of vegetable oil over medium-high heat. Once hot, add bread slices, paste-side down, and fry for 2 to 3 minutes on each side until crispy. Transfer to a paper towel-lined plate and serve hot or warm, topped with extra sliced green onions.
