Timeless Steak Diane, a classic dish once flamboyantly served tableside with cognac flames. Skip the theatrics, still savor the flavors.
Ingredients:
  • 0.5 cup demi-glace
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon tomato paste
  • 1 pinch cayenne pepper
  • 2 teaspoons vegetable oil
  • 2 (8 ounce) beef tenderloin steaks, fully trimmed, pounded to 1/2 inch thick
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon unsalted butter, cut into small chunks
  • 3 tablespoons shallot, minced
  • 0.25 cup Cognac or brandy
  • 0.25 cup heavy cream
  • 2 teaspoons sliced fresh chives
Instructions:
  • Sprinkle steaks with a generous amount of salt on both sides. Let the steaks sit at room temperature as you prepare the sauce.
  • Combine the demi-glace (refer to Cook's Note), mustard, Worcestershire sauce, tomato paste, and cayenne pepper in a bowl, stirring until well mixed.
  • Heat oil in a skillet over high heat, ensuring it covers the surface evenly. Once the oil begins to smoke, place the steaks carefully and add butter chunks. Sear meat on high heat until browned on each side, about 2 to 3 minutes per side, aiming for a rare doneness. Use an instant-read thermometer; the center should read 125°F (52°C). Move steaks to a warm plate.
  • Sautee shallots in a skillet until softened, about 2 to 3 minutes. Remove skillet from heat and carefully add Cognac, igniting it with a fireplace lighter. Once flames subside, return skillet to high heat and bring to a boil. Cook for a few minutes to slightly reduce. Stir in demi-glace mixture, cream, and steak juices, then cook on high heat until sauce starts to thicken, 3 to 5 minutes. Return steaks to the pan, reduce heat to low, and simmer gently until meat reaches your preferred level of doneness.
  • Plate the dish and generously spoon the sauce over it. Finish by sprinkling with fragrant chives for added freshness.
