Chef John's Turkey Noodle Casserole

Transform your leftover turkey into a mouthwatering noodle casserole that will make you forget it's leftovers!
Ingredients:
  • 12 ounces egg noodles
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3.5 cups cold milk
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 0.5 cup diced red bell pepper
  • 0.5 cup diced green bell pepper
  • 0.25 cup chopped green onions
  • 1 teaspoon garam masala
  • 1 teaspoon dried tarragon
  • 1 cup shredded pepperjack cheese
  • 1 teaspoon salt, or to taste
  • 3 cups cubed skinless cooked turkey
  • 5 ounces crushed potato chips
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C).
  • 1. Boil a large pot of lightly salted water. Add egg noodles and cook, stirring occasionally, until al dente, about 4 minutes. Drain.
  • In a large saucepan over medium heat, melt the butter until it is fragrant and bubbling. Slowly whisk in the flour and continue cooking for about 3 minutes, or until the mixture turns a light golden color.
  • Whisk milk into the butter and flour until smooth. Add cream of mushroom soup, red bell pepper, green bell pepper, green onions, garam masala, and dried tarragon. Simmer for 2 minutes, then take off the heat.
  • Fold in the pepperjack cheese until it's lusciously melted and fully mixed in.
  • 1. Combine pepperjack cheese mixture, turkey meat, and noodles in a large bowl, stirring until well mixed. Transfer mixture to a large casserole dish. Top with chips, gently pressing them down with a fork. Bake in a preheated oven until the casserole is golden brown on top and the sauce is bubbling, approximately 30 minutes.
