Chef John's turkey Sloppy Joe recipe: A lighter, flavor-packed twist on the classic beef Sloppy Joe.
Ingredients:
  • 2 tablespoons butter
  • 1 onion, diced
  • 1.25 pounds ground turkey
  • 0.5 cup cold water
  • 0.75 cup ketchup
  • 1.5 tablespoons brown sugar
  • 0.5 teaspoon cayenne pepper, or to taste
  • 0.5 teaspoon Worcestershire sauce
  • 0.5 teaspoon unsweetened cocoa powder
  • 1 cup water, or as needed
  • 6 hamburger buns, split
  • 0.5 cup shredded white Cheddar cheese
  • 0.33333334326744 cup chopped green onions
Instructions:
  • In a heavy skillet over medium heat, melt butter until sizzling. Sauté onion in the delicious butter until golden brown, approximately 5 minutes. Season with a pinch of salt and a generous amount of freshly ground black pepper.
  • Combine the turkey and 1/2 cup of cold water with the onions. Sauté and break up the meat until it starts browning, approximately 2 minutes. Stir in the ketchup, brown sugar, cayenne pepper, salt, and black pepper. Continue cooking and stirring until the liquid reduces, around 5 minutes.
  • Add Worcestershire sauce and cocoa powder, stirring consistently until the meat is fully cooked and the sauce thickens, about 20 to 30 minutes. Add water if necessary.
  • Preheat the broiler in the oven and position the rack 6 inches away from the heat source.
  • Place the hamburger buns under the broiler until they turn golden brown, which should take around 2 to 3 minutes.
  • Take the turkey mixture off the heat and combine with cheese and green onions. Serve on toasted hamburger buns.
