Chef John's simple white bread recipe creates a sweet and scrumptious loaf perfect for sandwiches.
Ingredients:
  • 1.25 cups whole milk, warmed
  • 1 (.25 ounce) package active dry yeast
  • 2.75 cups all-purpose flour, or more as needed
  • 3 tablespoons unsalted butter, very soft
  • 1 large egg, beaten
  • 1 tablespoon white sugar
  • 1 teaspoon fine salt
  • 1 pinch cayenne pepper
  • 1 tablespoon all-purpose flour, or as needed
  • 2 tablespoons melted butter, divided
Instructions:
  • Add warm milk to a stand mixer bowl with the dough hook attachment. Sprinkle yeast over the milk and wait for it to dissolve until small bubbles appear, about 10 to 15 minutes.
  • Combine 2 3/4 cups flour, softened butter, beaten egg, sugar, vinegar, salt, and baking soda in a mixer. Mix on low speed until the dough starts to come together, adding up to 1/4 cup more flour if necessary. Increase the speed slightly and knead for about 3 minutes. Scrape the sides and shape the dough into a ball. Cover and allow it to rise until doubled, about 1 1/2 to 2 hours.
  • Grease a spatula and a 9x5-inch loaf pan. Transfer the dough to the pan using the spatula, then spread it evenly. Dust the top with 1 tablespoon of flour and gently press to level the dough. Allow it to rise in the pan for 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) while you prepare the other ingredients.
  • Make a bold, lengthwise cut down the center of the loaf using a sharp knife or razor, slicing through multiple times if needed. Then, generously brush the top of the loaf with the majority of the melted butter.
  • Bake until beautifully golden brown in the preheated oven for approximately 30 minutes.
  • Take the loaf out of the oven and generously brush with the leftover butter. Allow it to cool in the pan for 10 minutes, then flip it onto a wire rack to cool completely for at least 1 hour before slicing.
