Chef John's zucchini bread: Beautiful, easy loaves with warm spices and crunchy walnuts.
Ingredients:
  • 1 tablespoon kosher salt
  • 4 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1 pinch cayenne pepper
  • 1 pinch freshly grated nutmeg
  • 2 large eggs
  • 1.5 cups white sugar
  • 1.5 teaspoons vanilla extract
  • 0.75 cup unsalted butter, melted
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C), then generously butter two loaf pans.
  • Season zucchini with kosher salt and allow to rest for 10 minutes. Rinse zucchini in a strainer under cold water to remove salt thoroughly. Drain for 15 to 20 minutes before proceeding.
  • Combine flour, baking powder, baking soda, cinnamon, ginger, cayenne, and nutmeg in a mixing bowl. Set aside for later use.
  • In a large mixing bowl, whisk together eggs, sugar, and vanilla until smooth and pale yellow, about 1 minute. Squeeze excess water from a handful of drained zucchini and add to the egg-sugar mixture. Repeat with remaining zucchini until all is added.
  • Combine the melted butter with the batter, stirring until well mixed. Gently fold in the walnuts, then add the flour mixture and mix until fully incorporated using a spatula.
  • Pour the mixture into the prepared loaf pans and gently tap the pans on the countertop to even out the batter.
  • Bake in the center of the oven at the set temperature until the top turns golden brown and a skewer inserted in the center comes out clean, around 50 minutes. Allow to cool in the pan for 10 minutes, then transfer to a cooling rack. Ensure it cools completely before serving.
