Ingredients:
2 (10 ounce) canschunk chicken, drained
4 hard-cooked eggs, chopped
0.25 cupParmesan curls, shaved with a vegetable peeler
0.25 cupchoppedpine nuts
2tablespoons sweet dill pickle relish
0.25 cupchoppedwhite onion
0.33333334326744 cupmayonnaise
0.33333334326744 cupcole slaw dressing
salt and freshly ground black pepper to taste
10slicessandwich bread
5lettuce leaves
5slicesripe tomato
2avocados, sliced
5slicesMonterey Jack cheese
Instructions:
Gently mix together the canned chicken, eggs, Parmesan cheese, pine nuts, pickle relish, chopped onion, mayonnaise, cole slaw dressing, and season with salt and pepper in a large bowl. Chill in the refrigerator for 30 minutes to enhance the flavors.
Spread a generous amount on 5 slices of sandwich bread, then layer with lettuce, tomato, avocado, and Monterey Jack cheese. Finish by topping with the remaining bread slices.
