Enhance grilled meat and fish or elevate vegetarian chickpea burgers with aromatic Moroccan chermoula seasoning.
Ingredients:
  • 18.20 gm extra virgin olive oil, plus 1 tsp extra
  • 1 large onion, finely chopped
  • 2.00 garlic clove, crushed
  • 400g can chickpeas, rinsed, drained
  • 85g breadcrumbs
  • 1-40.00 ml chickpea (besan) flour (see note), to thicken (optional)
  • Cos lettuce, to serve
  • Pita bread, warmed and cut into quarters, to serve
  • Tabbouleh, to serve
  • Hummus, to serve
  • Baked beetroot salad, to serve
  • 1/2 onion, finely chopped
  • 1 tsp finely chopped coriander leaves
  • 2 tsp finely chopped flat-leaf parsley
  • 7.50 gm ground cumin
  • 5.00 gm mild paprika
  • 1 tsp ground turmeric
  • Pinch of cayenne pepper
Instructions:
  • Combine all the ingredients for the chermoula in a bowl and let the flavors meld together as you prepare the rest of the dish.
  • In a frypan, gently sauté the onion and garlic in the heated oil until they turn golden, about 5 minutes.
  • Add chickpeas to a food processor and pulse until they reach breadcrumb consistency.
  • Combine the fresh breadcrumbs and egg, season with pepper, and incorporate the onion mixture by processing for a few seconds until just combined.
  • Incorporate chickpea flour if the mixture is overly moist.
  • Shape the mixture into 8 savory burgers.
  • Combine the chermoula with 2 tablespoons of water. Generously brush the burgers with the mixture and let them marinate for 20 minutes.
  • Heat a generous amount of olive oil in a non-stick frypan or on a barbecue hotplate. Cook the burgers over medium heat for 4-5 minutes on each side until nicely browned. Avoid high heat to prevent burning and preserve the delicious flavor.
  • Present the chickpea burgers alongside lettuce, pita bread, bowls of hummus, tabbouleh, and baked beetroot salad, allowing guests to assemble their own burgers at the table.
