Cherry and mascarpone French toast

Enjoy this dessert while the bread is crispy and the filling is warm and gooey.
Ingredients:
  • 415g can stoneless black cherries in syrup
  • 1/2 x 250g tub mascarpone, softened
  • 1 tsp finely grated orange rind
  • 24.00 gm icing sugar mixture
  • 8 slices thick fruit bread
  • 169.95 gm milk
  • 20g butter
  • Pinch of ground cinnamon
Instructions:
  • Drain the cherries and gently pat them dry on a paper towel to remove excess moisture.
  • In a bowl, combine mascarpone, orange rind, and 1 tablespoon icing sugar. Spread mascarpone mixture on one side of each slice of bread. Top half of the slices with cherries and then sandwich with the remaining slices, mascarpone side facing down.
  • Combine eggs and milk in a shallow dish, whisk until well blended.
  • In a large non-stick frying pan over medium heat, melt the butter. Quickly dip both sides of each sandwich in the egg mixture, letting any extra drip off. Place sandwiches in the pan and cook for 2 minutes on each side until golden. Cut sandwiches in half and serve by sprinkling a mixture of cinnamon and remaining icing sugar on top.
